1st Course Marinated Italian Sardine Salad Naked Cow Dairy feta cheese, Big Island fennel, local green & yellow beans with a roasted Hau'ula tomato vinaigrette paired with... Bigi, Orvieto, Umbria, Italy (50% Trebbiano, 20% Grechetto, 10% Verdello, 10% Drupeggio) Still white wine with notes of wild flowers honey and musk. Subtle hints of almonds, this is a well balanced wine with a pleasant finish. 2nd Course Fresh Dayboat Scallop Carpaccio house preserved lemon, habanero tobiko, black lava salt paired with... Carpineto, Dogajolo Rosato, Tuscany, Italy (100% Sangiovese) Dry Rose with a floral bouquet, particularly roses. Bright flavors of crisp red apple, currants and a hint of sour cherry that finishes clean on the palate. 3rd Course Guajillo & Juniper Rubbed Duroc Tomahawk Pork Chop pickled brussel sprouts paired with... Fattoria di Magliano, Heba Morellino di Scanso DOC, Maremma, Tuscany, Italy (85% Sangiovese, 10% Syrah, 5% other) On the nose, Heba has fragrant aromas of red berries. It's expressive on the palate with an addition of black berries. A soft, smooth mouthfeel that is well rounded with sweet tannins. 4th Course Pan Roasted Breast of Squab Big Island cinnamon & clove spiced Seckle pear reduction paired with... Cesari, Amarone della Valpolicella Classico DOC, Veneto, Italy (70% Corvina, 20% Molinara, 10% Rondinella) Typical notes of raisined fruit and cherry flavors. Mild hints of vanilla, elegant and warm with velvety mouthfeel. An incredibly long finish lingers on the palate. Dessert...
