THANKSGIVING AT HOME - The Kahala Hotel & Resort's popular Thanksgiving at Home program will be offered again on Thanksgiving Eve and Thanksgiving Day. The package, priced at $175 (plus tax), includes a 12-14-pound turkey with all the garnishes such as stuffing, gravy, mashed potatoes, sautéed autumn vegetables, cranberry sauce, fresh baked bread, salad with fall vegetables and lilikoi vinaigrette, and a pumpkin pie. Extra garnishes are available for additional fees. Thanksgiving at Home packages may be picked up from 4 until 7 p.m. on the eve of Thanksgiving, and from 9 a.m. until 5:30 p.m. on Thanksgiving Day (Nov. 27 and 28, 2013). FRESH-BAKED KAHALA STOLLEN -- Need a last minute gift or a special treat for your office or volunteer staff? The Kahala's fresh-baked Christmas Stollen is offered December 1-31, 2013 for all your last-minute gift-giving needs. As a Christmas pastry, Stollen was first baked and served in Germany's Saxon Royal Court in 1427. Stollen is a loaf-shaped cake-bread traditionally made with dried fruits, nuts, and spices and dusted with sugars or icing. The shape of the cake was originally meant to signify the baby Jesus wrapped in swaddling clothes. Chef Michael's version includes raisins, orange and lemon peel, slivered almonds, rum, marzipan, and his special blend of stollen spices including allspice, cinnamon, cloves, ginger, black pepper, and nutmeg. Fresh out of the oven, the Christmas Stollen is spread with melted butter and then sprinkled with granulated sugar and dusted with confectioner's sugar. It's delicious! For an extravagant Thanksgiving Holiday Brunch, visit Hoku's where abundance reigns.
First stop is always the seafood bar with fresh chilled lobster, oysters on the half shell, shrimp, crab claws, and ahi sashimi. Don't forget the poke varieties and made-to-order sushi--ahi ebi, salmon, hamachi, spicy tuna, and California roll. Among the salad selections will be haricot verts with pecorino and toasted hazelnuts, chilled asparagus, spinach, romaine and Waimanalo greens with house dressings, and a wide assortment of imported and domestic cheeses. Linger over a cup of sweet potato soup, then clear your palette with slices of fresh island fruits--the best is yet to come! Main courses on the buffet will includes shrimp and vegetable tempura, butter poached King crab legs, Hoku's eggs Benedict (made with cheddar cheese biscuits, smoked salmon and béarnaise sauce), and French toast with crunchy pecans and sweet bananas. Of course there will be traditional roast turkey with cranberry sauce and mashed potatoes and a Thanksgiving rib roast served with horseradish cream. Stop by the made-to-order omelet bar and toss in all your favorite toppings, from spinach and Maui onion to ham, bacon, mushroom, and cheeses. The Kahala Hotel's Plumeria Beach House holiday buffets put the "bountiful" in Thanksgiving. Served oceanside with stunning views of the blue Pacific, you can pick either outdoor al fresco dining or inside in the more protected main dining area. For starters, enjoy a variety of salads including roasted mushroom and artichoke salad, pasta salad with salami, provolone, and pesto, fresh fruit salad, and marinated beets with citrus vinaigrette. The appetizers featured include a selection of fresh poke with ahi, mussels, and octopus and a raw bar with fresh oysters on the half shell and lomi lomi salmon. Other fresh seafood includes green lip mussels, shrimp cocktail, and an assortment of fresh-made sushi. Enjoy Portuguese and link sausages, bacon, smoked salmon creamed spinach benedict, made-to-order omelets, and malted waffles. The Kahala's holiday décor is always splendidly done. Breath-taking views of panoramic ocean vistas as well as twinkling Christmas lights await you at Hoku's. Chef Wayne Hirabayashi has gone all out to prepare a gourmet meal fit for a King for your holiday fine dining. Your Christmas Eve and Christmas Day culinary adventure will begin with an amuse bouche of apple cider with brandy and cinnamon sablé. Tender delicate foie gras is the first course adorned with cherries, black sesame and brioche. It's an all you can eat affair that begins at 11:30 a.m. right after all the holiday gifts are unwrapped. Made-to-order omelets with all your favorite fillers, hot and cold soups, sautéed salmon benedicts---what's not to love! The main attractions will be prime rib of beef and orange-cranberry glazed ham. Celebrate the New Year at Hoku's, where the service and cuisine is always remarkable. Chef Jeremy Shigekane's New Year's menu will include several courses, all paired with delicious wines. The special prix fixe meal begins with Champagne "shave ice" for an amuse bouche. Kushi Oysters with cucumber gelee and caviar is your first course, followed by a fish course of Hirame with tomato, ume, and shiso. Kobe beef has the starring role as the entrée in this New Year's Eve dinner served with lobster bone marrow gratin, hearts of palm, and persillade (a zippy sauce with garlic, parsley and other herbs, oil and vinegar). The evening's palate cleanser will be a lime-mint granita served with coconut sorbet. For the gourmet in all of us, this hearty dinner buffet has everything from soup to nuts, and noodles, too. Snow crab claws, green lip mussels, shrimp cocktail and other seafood delights are showcased at the chilled bar for an all you can eat splurge before your New Year's resolutions kick in. At the salad cart, mix up fresh field greens with Cajun shrimp and scallop pasta salad, or roasted mushroom and asparagus salad. The carving stations will feature roasted beef tenderloin with port wine demi glace and garlic and thyme roasted rack of lamb. Other hot selections include sautéed duck breast with wild mushroom cream, shrimp and vegetable tempura, steamed King crab legs with drawn butter and oysters Rockefeller.
